Fresh Spinach Salad

  • 1 (10 oz.) pkg. spinach (fresh)
  • 3 to 4 slices bacon, cooked
  • 1 hard-boiled egg, diced
  • 1 small red onion, separated
  • 1/3 c. oil
  • 3 Tbsp. vinegar
  • 1/2 tsp. salt
  • 1/8 tsp. oregano
  • 1/8 tsp. pepper

Directions

    Wash spinach and drain.

    Add bacon which has been cooked crisp and crumbled along with the onion, which has been separated into rings and egg.

    Combine oil, vinegar, salt, oregano and pepper in a jar with a lid and shake well.

    Pour over spinach mixture and toss.

    Serves 4 to 6.
