  • 2 bundles fresh spinach
  • 4 strips bacon
  • 2 Tbsp. vinegar
  • 2 Tbsp. water
  • 1 Tbsp. sugar
  • 3 sliced, hard-boiled eggs
  • salt and freshly ground pepper to taste

Directions

    Wash and thoroughly dry spinach.

    Fry bacon until crisp; drain on paper towel and crumble.

    Mix vinegar, sugar, water, salt and pepper into bacon fat and stir.

    Heat to boiling point.

    Add bacon.

    Pour over greens mixed with eggs.

    Toss lightly.
