- 6 medium size ripe tomatoes
- 3 c. all-purpose flour
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1/2 c. margarine, softened
- 1 c. firmly packed light brown sugar
- 1 tsp. ground allspice
- 3/4 tsp. grated orange rind
- 1 tsp. orange extract
- 1/2 tsp. ground ginger
- 2 eggs
- 1/2 c. raisins
- 1/2 c. chopped dates
Directions

1Preheat oven to 350°.

2Place tomatoes in boiling water until skins loosen slightly, about 1 minute.

3Rinse with cold water and remove skins.

4Cut tomatoes into quarters; remove seeds and chop (makes about 2 3/4 cups).

5Drain very well in a sieve or colander; set aside.
