- 4 lb. fully ripe tomatoes
- 1 Tbsp. minced onion
- 3 fresh basil leaves
- 2 peppercorns, crushed
- 1 tsp. salt
- lemon slices or tiny leafy celery ribs
- celery salt
Directions

1Wash tomatoes; remove cores and cut into quarters.

2Put in stainless steel kettle with onion, basil, peppercorns and salt. Simmer over low heat, stirring often and mashing tomatoes to soften to a juicy mush.

3Put the mixture through a food mill.

4If you want a thinner juice, put the milled puree through a fine strainer.

5Add more salt to taste.

6Chill.
