Fresh Tomato Pasta

Ingredients

  • 1/2 stick unsalted butter, melted
  • 3 cloves garlic, minced
  • 4 c. cubed Italian bread
  • 4 large tomatoes, chopped
  • 2 c. chopped fresh basil
  • 1 lb. capellini (angel hair)
  • 1/4 c. virgin olive oil
  • freshly ground black pepper

Directions

    Preheat oven to 400°.

    Toss bread with butter and 2/3 of garlic.

    Put on cookie sheet and bake for 10 minutes.

    Add a little salt.

    Toss tomatoes with basil and rest of garlic.

    Cook pasta in 4 quarts boiling water according to package directions. Add drained pasta to tomatoes and croutons.

    Add freshly ground pepper.

    Drizzle olive oil over and mix well. Serves 6.
