  • 9 inch pie shell
  • 2 - 3 large tomatoes
  • 1 Tbsp. fresh basil, chopped
  • 1 Tbsp. fresh chives, chopped
  • 2-3 green onions, chopped
  • 1 c. Hellmann's mayonnaise
  • 1 c. sharp cheddar cheese

Directions

    Bake and cool pie crust.

    Peel, slice, salt tomatoes and drain 20 minutes on a cooling rack.

    Mix basil, chives, onion. Grate cheese and mix with mayonnaise.

    Preheat oven 350.

    Layer tomatoes, onion, basil, chives mix.

    Add salt and pepper to taste. Spread cheese and mayonnaise on top.

    Bake 30 minutes or until top is lightly browned.
