  • 2 large ripe tomatoes (1 lb.), cut into 1/2-inch cubes
  • 1 medium white onion, finely chopped
  • 1/4 c. chopped cilantro or parsley
  • 1 tsp. dried marjoram or oregano
  • 2 Tbsp. finely diced, seeded jalapeno peppers (optional)
  • 3 Tbsp. fresh lime juice
  • 1/2 tsp. salt or salt substitute

Directions

    In a medium bowl, combine all of the ingredients.

    Let stand at room temperature at least 30 minutes or up to 2 hours.

    Cover and refrigerate for longer storage.

    Return to room temperature before serving.
