- 2 large onions, sliced
- 3 Tbsp. butter (more or less)
- 3 carrots, sliced
- 1 medium green pepper, sliced
- 1/2 lb. green beans
- 2 large tomatoes, peeled and sliced
- 1/4 c. chopped parsley
- 1 tsp. salt
- pepper (optional)
Directions

1Saute onions in butter until golden.

2Separate into rings, if desired.

3Add pepper rings and cook until tender.

4Combine ingredients in a 2-quart shallow casserole and toss lightly. Cover and bake at 350° for 1 1/2 hours or until vegetables are tender, stirring once.
