  • 2 large onions, sliced
  • 3 Tbsp. butter (more or less)
  • 3 carrots, sliced
  • 1 medium green pepper, sliced
  • 1/2 lb. green beans
  • 2 large tomatoes, peeled and sliced
  • 1/4 c. chopped parsley
  • 1 tsp. salt
  • pepper (optional)

Directions

    Saute onions in butter until golden.

    Separate into rings, if desired.

    Add pepper rings and cook until tender.

    Combine ingredients in a 2-quart shallow casserole and toss lightly. Cover and bake at 350° for 1 1/2 hours or until vegetables are tender, stirring once.
