  • 2-1/2 cups Carrots, Chopped
  • 1-1/2 cup Celery, Chopped
  • 1 whole Medium Onion, Chopped
  • 1-1/2 cup Peas
  • 1 cup Corn
  • 2 cups Green Beans, Chopped
  • 30 ounces, weight Canned Diced Tomatoes
  • 32 ounces, fluid Vegetable Stock
  • 1 cup Water
  • 1 Tablespoon Diced Garlic
  • 1 Tablespoon Pepper

    Combine all ingredients in a very large pot with a lid. Place on stovetop over medium heat and cook, covered, for 4-5 hours, stirring occasionally. Or if you prefer, simply cook until vegetables are tender.
