- 1 large onion, sliced
- 3 garlic cloves, minced
- 1 Tbsp. olive oil
- 1 lb. yellow squash, cut into 1/2-inch cubes
- 1 lb. patty pan squash, cubed
- 2 medium tomatoes, peeled and chopped
- 3/4 lb. fresh green beans, cut
- 1 1/4 c. fresh sweet corn
- 1 tsp. salt
- 1/4 tsp. pepper
Directions

1In large skillet, saute onion and garlic in oil until tender. Add squash, tomatoes and beans.

2Reduce heat; cover and simmer 15 minutes or until squash is tender.

3Add corn, salt and pepper. Cook for 3 minutes or until corn is tender.

4Yields 12 servings.
