- Butter, for baking dish
- 4 cups milk
- 1 1/2 cups quick cooking grits
- 1/4 pound plus 4 tablespoons unsalted butter
- 1 1/2 teaspoons salt
- Dash of hot pepper sauce
- 1 1/2 cups grated cheddar or rat cheese
- 3 eggs, well-beaten
- Butter, for frying
- Large rectangular ovenproof baking dish
Directions

1Butter the baking dish, set aside.

2Preheat the oven to 350.

3In a large saucepan, bring the milk and 2 cups water to a boil over high heat.

4Pour in the grits, stirring constantly until moistened.

5Remove from the heat and stir in the butter, seasonings, cheese and eggs.

6Pour into the prepared baking dish and bake for 1 hour.

7Let cool to room temperature and cut into diamond shapes.

8Pan fry in butter until golden on both sides.
