  • 4 lb. fresh catfish
  • 1 c. cornmeal
  • 1 c. flour
  • 2 tsp. salt
  • 1/2 tsp. pepper
  • 2 eggs
  • 2 Tbsp. water
  • vegetable oil

Directions

    Cut fish into serving size pieces.

    Combine cornmeal, flour, salt and pepper.

    Beat eggs and water until blended.

    Dip fish in egg mixture and then coat in cornmeal mixture.

    Heat vegetable oil in skillet until hot.

    Fry fish in hot oil until brown on both sides.
