- 1 lb catfish fillet
- 1/2 cup buttermilk (or milk)
- 1/2 cup cornmeal (yellow)
- 1/2 cup flour
- 1 teaspoon fresh ground black pepper
- 1/2 teaspoon kosher salt
- 1/4 teaspoon paprika
- 1/8 teaspoon cayenne
- 1/8 teaspoon garlic powder
- 1/8 teaspoon onion powder
- 1/2 cup oil (more if needed)
Directions

1Fillet and clean catfish (removing all dark meat); soak in buttermilk or milk for 1-2 hrs; drain well.

2Spinkle fish with salt, pepper, and herbs.

3Dredge in corn meal and flour mixture.

4Cook in a small skillet of 1/2 cup oil, being careful not to overcrowd fillets, probably cooking in two batches.

5Fry about 6-8 minutes, watching closely so as not to burn, turn once.

6Serve with a lemon wedge if desired.
