  • 1 pound To 1-3/4 Pounds Catfish Fillets
  • 2 Tablespoons Prepared Mustard
  • 23 cups Yellow Cornmeal
  • 1/2 teaspoons Salt
  • 1/2 teaspoons Pepper
  • 1/4 teaspoons To 1/2 Teaspoon Ground Red Pepper (depending On How Hot You Like It)
  • Cooking Oil Or Shortening

Directions

    Spread catfish with a thin coating of mustard.

    Combine cornmeal, salt, pepper, and red pepper in a plastic bag.

    Add fish; shake to coat.

    Heat about a 1/2 inch of oil or shortening to 375F in a large skillet.

    Fry fillets till fish is golden brown, about 3 4 minutes per side.

    Drain on paper towels.

    Serve hot with your favorite tartar sauce.
