- 2 Tablespoons Prepared Mustard
- 23 cups Yellow Cornmeal
- 1/2 teaspoons Salt
- 1/2 teaspoons Pepper
- 1/4 teaspoons To 1/2 Teaspoon Ground Red Pepper (depending On How Hot You Like It)
- Cooking Oil Or Shortening
Directions

1Spread catfish with a thin coating of mustard.

2Combine cornmeal, salt, pepper, and red pepper in a plastic bag.

3Add fish; shake to coat.

4Heat about a 1/2 inch of oil or shortening to 375F in a large skillet.

5Fry fillets till fish is golden brown, about 3 4 minutes per side.

6Drain on paper towels.
