Directions

1Put flour, salt and pepper in paper bag.

2Coat chicken with mixture by shaking bag.

3Place pieces on wire rack and let dry about 15 minutes before frying.

4In 12-inch frying pan, over medium-high heat, brown chicken on all sides in hot oil, turning frequently.

5Reduce heat to medium-low, cover and cook until tender.

6Remove cover for last few minutes to crisp chicken.
