  • 1 lb. shrimp
  • cocktail sauce
  • unsweetened shredded coconut
  • corn starch
  • flour
  • 1 beaten egg plus a bit of water

Directions

    shake shrimp with 3/4 corn starch and 1/3 flour.

    dredge in egg wash

    dredge in coconut that has 1-2 Tbs corn starch.

    Fry in safflower oil at 350 - 370 F.
