Fried Cucumbers

- 1 large cucumber
- 1/2 c. bread crumbs, finely chopped
- 1 egg, well beaten
- salt and pepper to taste
- oil for frying
Directions

1Peel cucumber; cut in lengths and remove seeds.

2Cook in boiling water for 3 minutes; drain and cool.

3Dip carefully in beaten egg, then roll in crumbs.

4Fry in very little amount of cooking oil until brown on both sides.

5Serve at once.
