- 1 eggplant
- 1 small onion, finely chopped
- 2 eggs
- cornmeal
- flour
Directions

1Select a nice, firm eggplant, free of blemishes.

2Peel and slice.

3(Slice anyway you please, round, shoestring or wedges, etc.).

4Soak at least 15 to 20 minutes (longer if preferred) in very salty water.

5Drain and pat dry.

6Mix onion, eggs and enough cornmeal and flour to make a batter.

7Dip eggplant in batter and fry in hot grease, being careful not to burn grease.

8(Always use fresh shortening or oil.)

9Serve at once.
