  • 1 large eggplant
  • flour
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 2 eggs, beaten
  • 2 Tbsp. milk
  • 1 1/2 c. cracker meal
  • 2 Tbsp. grated cheese

Directions

    Peel eggplant and cut into French fry size.

    Dust with salt and pepper and seasoned flour.

    Dip in beaten egg and milk.

    Roll eggplant in cracker meal.

    Fry in deep fat at 375° for 4 to 5 minutes.

    Drain on absorbent towel.

    Sprinkle with seasoned salt and grated cheese.
