- 1 large eggplant
- flour
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 2 eggs, beaten
- 2 Tbsp. milk
- 1 1/2 c. cracker meal
- 2 Tbsp. grated cheese
Directions

1Peel eggplant and cut into French fry size.

2Dust with salt and pepper and seasoned flour.

3Dip in beaten egg and milk.

4Roll eggplant in cracker meal.

5Fry in deep fat at 375° for 4 to 5 minutes.

6Drain on absorbent towel.

7Sprinkle with seasoned salt and grated cheese.
