- 1 big Eggplant
- 2 c. Olive Oil
- 1 box Bacalaitos Mixture
- 1 tsp. Adobo/salt
Directions

1Mix bacalaitos according to instructions on box.

2Mix well and pour mixture in a deep bowl.

3Add adobo if desired.

4Heat pan with oil till hot.

5Cut eggplant into slices.

6Dip into the bacalaito mixture and place in pan.

7Cook each side for 1-2 minutes and remove from pan.

8Cool for a few minutes before serving.
