- 3 slices crisp cooked bacon, chopped
- 14 cup diced tomato
- 12 cup finely chopped lettuce
- 12 cup finely chopped Baby Spinach
- 1 12 tablespoons fat-free mayonnaise
- 1 pinch salt
- 14 teaspoon black pepper
- 1 large cucumber
- minced parsley or green onion
Directions

1Combine bacon, tomato, lettuce and spinach with mayonnaise.

2Season with pepper; set aside.

3Peel cucumber.

4Trim off ends and slice in half lengthwise.

5Use spoon to scoop out seeds; discard seeds.

6Divide BLT mixture between cucumber halves, mounding in hollowed areas.

7Sprinkle with minced parsley, if desired.

8Cut into 2-inch pieces.

9Note: Make these snacks when cucumbers are plentiful and large enough to easliy hollow out with a spoon.

10You may make these up to 12 hours ahead of time and chill until serving.
