- 1 medium eggplant (about 1 1/2 lb.)
- 1 tsp. turmeric
- 1 c. milk
- 1/4 c. salad oil
- 1 c. self-rising flour
- 2 tsp. curry powder
- 1 egg
Directions

1Wash eggplant.

2Beat remaining ingredients with rotary beater until smooth.

3Heat fat or oil (1-inch deep) to 375° in large skillet.

4Cut eggplant into 1/4-inch slices.

5Dip slices into batter letting excess drip into bowl.

6Fry in hot fat until golden brown, turning once.

7Drain.

8If desired, salt to taste. Yields four servings.
