- salt and pepper
- bread crumbs, flour or cornmeal
- cooking oil
Directions

1Peel eggplant; slice in rounds.

2Soak in salted water for 1/2 hour; drain.

5Dip eggplant in mixture; remove and roll in seasoned bread crumbs, flour or cornmeal.

6Fry in deep fat until golden brown.
