  • 1 egg
  • 1 c. milk
  • salt and pepper
  • bread crumbs, flour or cornmeal
  • cooking oil

    Peel eggplant; slice in rounds.

    Soak in salted water for 1/2 hour; drain.

    Beat egg.

    Combine with milk.

    Dip eggplant in mixture; remove and roll in seasoned bread crumbs, flour or cornmeal.
