  • 1 large carton persimmon pulp (4 c.)
  • 4 eggs
  • 1 stick melted margarine
  • 2 c. sugar
  • 1 c. buttermilk
  • 1/2 tsp. soda
  • 1/2 tsp. ginger
  • 1/2 tsp. cinnamon
  • 2 to 2 1/2 c. flour

Directions

    Mix together buttermilk and soda.

    Melt margarine in long casserole dish you plan to use.

    Add to batter.

    Makes 2 (1 1/2-quart) casserole dishes or 1 large pan.

    Cook at 350° until brown on top, 45 minutes to 1 hour.

    Place 2 strips bacon on top before cooking.
