- 1 large eggplant
- 2 Tbsp. salt
- 3/4 c. pancake mix
- 1 c. milk
- 2/3 c. cracker meal
- 2 tsp. Salad Supreme seasoning
- oil for frying
Directions

1Peel and slice eggplant 1/2-inch thick and place in bowl. Sprinkle with salt and add enough water to cover eggplant completely.

2Soak 15 minutes.

3Drain and rinse.

4Beat the pancake mix together with the milk.

5Combine cracker meal and seasoning. Heat oil in large skillet over medium heat.

6Dip eggplant slices in pancake batter, then in cracker meal mixture.

7Fry until golden brown on both sides.

8Serves 6 to 8.
