Fried Eggplant Supreme

  • 1 large eggplant
  • 2 Tbsp. salt
  • 3/4 c. pancake mix
  • 1 c. milk
  • 2/3 c. cracker meal
  • 2 tsp. Salad Supreme seasoning
  • oil for frying

Directions

    Peel and slice eggplant 1/2-inch thick and place in bowl. Sprinkle with salt and add enough water to cover eggplant completely.

    Soak 15 minutes.

    Drain and rinse.

    Beat the pancake mix together with the milk.

    Combine cracker meal and seasoning. Heat oil in large skillet over medium heat.

    Dip eggplant slices in pancake batter, then in cracker meal mixture.

    Fry until golden brown on both sides.

    Serves 6 to 8.
