Ingredients

  • 1 c. shredded chicken
  • 1 c. de-shelled shrimp, cut lengthwise
  • 1 clove crushed garlic
  • 1 medium onion
  • 2 Tbsp. oil
  • 1 c. small cubes sweet potato
  • 1 c. green beans (French-cut)
  • 1 c. celery, cut small
  • 3 c. bean sprouts
  • 1 c. garbanzo beans
  • eggroll papers

Directions

    In a wok or large skillet, heat oil.

    Saute garlic until brown; add chopped onions, then add the chicken and shrimp. Stir-fry vegetables until half cooked.

    Drain in a colander and set aside until cooled.

    Separate the wrappers.

    Put 1 1/2 to 2 tablespoons of meat/vegetable mixture in each wrapper and wrap, folding both sides.

    Deep fry until golden brown.

    Do not cover to prevent sogginess.
