- 12 frog legs
- 1 tsp. salt
- 1 c. sifted bread crumbs
- oil for frying
- 1/2 c. lemon juice
- 2 eggs
- 1 c. chopped parsley
- Creole seasoning or salt and pepper
Directions

1Scald frog legs for 3 minutes in boiling water containing 1/2 cup lemon juice and salt.

2Remove; dry with clean towel.

3Season with Creole seasoning or salt and pepper.

4Dip in a batter made of 2 well beaten eggs, then roll in bread crumbs.

5Cover frog legs well; drop into oil heated to boiling point.

6Fry to a golden brown.

7Remove from oil; drain well on absorbent paper.

8Fry parsley for 1 minute.

9Place a folded white napkin in a dish.

10Lay frog legs upon it; garnish with fried parsley and sliced lemons.
