  • 4 large firm green tomatoes
  • 1/2 c. all-purpose meal mixed with 2 Tbsp. flour
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • bacon drippings or shortening

Directions

    Cut tomatoes into 1/4-inch slices.

    Coat tomatoes in flour/cornmeal mixture; salt and pepper.

    Place in heavy skillet containing bacon drippings.

    Fry slowly until very brown, turning once.
