- 1 c. cornmeal
- 1/2 c. flour
- 1 Tbsp. sugar
- 4 to 5 tomatoes, sliced 1/2-inch thick
- shortening (for frying)
- salt and pepper to taste
Directions

1Mix dry ingredients in a bowl.

2Dredge tomatoes in mix on both sides to coat them well.

3Use enough shortening to make 1/4-inch depth when heated in skillet.

4Heat skillet to medium-high.

5Fry tomatoes a few at a time, without touching each other, about 2 minutes on each side.

6They should be golden brown.

7Drain on paper towels.
