  • 3 whole Green Tomatoes, Cut In 1/4 Inch Slices
  • Salt And Pepper, to taste
  • 1/2 cups All-purpose Flour
  • 2 whole Large Eggs, Beaten With Below Amount Of Water
  • 1 Tablespoon Water
  • 1/2 cups Yellow Cornmeal
  • 1/2 cups Panko Crumbs
  • 1/8 teaspoons Paprika
  • Oil, For Frying

    Liberally season green tomato slices with salt and pepper on both sides.

    Add flour into a shallow bowl. Combine the egg and water in a separate shallow bowl.

    Combine cornmeal, panko crumbs and paprika in another small bowl and whisk together.

    Begin by dipping each seasoned tomato slice into the flour, coating on both sides.

    Next add floured tomato slice into the egg mixture, coating on both sides.

    Lastly dip into cornmeal and crumb mixture, coating on both sides. Set the coated slices aside on a baking sheet. Repeat dredging process, starting with the flour mixture, until all slices are coated.

    Heat oil (just enough to cover the bottom of the pan) in a frying pan over medium high heat.

    Fry tomato slices on both sides until golden brown and drain on paper towels.

    Serve warm.
