  • 1/2 cup flour
  • 1/4 cup cornmeal
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp. dried oregano
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 3 to 4 green tomatoes, cut into 1/2-inch slices
  • cooking oil

Directions

    Combine flour, cornmeal, Parmesan cheese, oregano, salt and pepper.

    Coat tomato slices with flour mixture.

    In a skillet, heat oil over medium.

    Fry tomatoes for 2 to 3 minutes per side until tender and lightly browned.
