- 5 medium green tomatoes
- 3/4 c. yellow cornmeal
- 1/4 c. flour
- 2 tsp. salt
- few dashes of pepper
- vegetable oil
Directions

1Cut tomatoes into 1/2-inch slices.

2Mix cornmeal, flour, salt and pepper; dip both sides of tomato slices into mixture.

3Heat oil in a skillet until sizzling hot.

4Put in tomatoes and cook quickly until browned on underside.

5Turn tomatoes carefully; reduce heat and cook until thoroughly hot and soft through center. Remove to paper towels to drain.

6Makes 4 servings.
