Fried Green Tomatoes

  • 1/4 c. cornmeal
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 2 green or very firm tomatoes, cut into 1/2-inch slices
  • 2 Tbsp. hot butter or margarine or bacon drippings

Directions

    Combine the first 3 ingredients in a pie plate. Dip the tomatoes slices in mixture to coat both sides.

    In a 12-inch skillet, over medium heat, in the butter or margarine or bacon drippings, fry tomato slices, a few at a time, until golden brown and crisp on both sides. Add more butter as needed.
