- 3 medium firm green tomatoes
- Salt and pepper
- 1/2 c. flour
- 1/4 c. milk
- 2 eggs, beaten
- Bread crumbs or cornmeal
- 1/4 c. cooking oil
Directions

1Cut unpeeled tomatoes into 1/2 inch slices.

2Sprinkle slices with salt and pepper.

3Let tomatoes stand for 15 minutes. Meanwhile, place milk, flour, eggs and bread crumbs each in separate shallow dishes.

4Dip tomato slices first in milk, then flour, then eggs, then bread crumbs (or cornmeal).

5In a skillet fry half the coated tomato slices at a time in hot oil over medium heat for 4 to 6 minutes on each side or until brown.

6(If tomatoes begin to brown too quickly, reduce heat to medium low.)

7If necessary, add more oil.
