Ingredients

  • 6 1/2 c. water
  • 1 1/2 c. yellow cornmeal
  • 1 1/2 tsp. salt
  • 2 Tbsp. butter

Directions

    Bring 5 cups water to boil.

    In bowl add 1 1/2 cups water with cornmeal and salt.

    Add mixture gradually to boiling water, stirring constantly.

    Cook 3 minutes.

    Reduce heat to low and cook 15 minutes longer.

    Pour into greased loaf pan.

    Cool to room temperature.

    Cover and refrigerate.

    Loosen mush along sides with knife.

    Place on inverted plate and turn over.

    Slice 1/4-inch thick.

    Fry over medium heat in large skillet.

    Brown each side, turning once.

    Transfer to platter.

    Keep warm in 300° oven.

    Serve with butter and corn syrup.
