Fried Oyster Patties

  • 2 eggs
  • 3/4 c. self-rising flour
  • 1 Tbsp. cooking oil
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 pt. standard oysters with juice
  • 1/2 stick margarine (1/4 c.)
  • 3 Tbsp. shortening

Directions

    In bowl, beat eggs well.

    Add flour, preferably with a whisk, a small amount at a time.

    Mix in oil, salt and pepper.

    Gently stir in oysters with the juice.

    Heat margarine and shortening in skillet.

    Spoon batter into pan for patties.

    Fry, like fritters, over moderate heat.

    Remove and keep warm on absorbent paper until ready to serve.

    Makes at least 1 dozen patties.
