- 4 to 6 c. cooked rice
- 4 eggs, scrambled
- 1 large onion, chopped
- 1 small can bean sprouts, drained
- 1/4 to 1/2 c. soy sauce
- 1/2 c. chopped fresh green onion
Directions

1Cook eggs and set aside.

2In wok or large iron skillet at high heat, spray skillet with nonstick cooking spray.

3Add onion and cook about 1 1/2 minutes, then add bean sprouts.

4Keep stirring, then add the rice and soy sauce.

5Fold into onion and bean sprouts. The rice should have a light brown color.

6Stir until blended, then fold in egg.

7Remove from heat and toss with green onion.
