- 2 eggs, beaten
- 3 Tbsp. oil
- 1 c. chopped shrimp, ham, pork or beef
- 1/2 c. green onions, thinly sliced
- 4 c. cold cooked rice
- 4 Tbsp. soy sauce
- 1/2 tsp. sugar
- salt, if needed
Directions

1Fry beaten eggs until firm in the oil, remove from heat and mash with fork.

2Return eggs to stove with meat.

3Add onion.

4Cook over medium heat, stirring constantly for 3 to 4 minutes.

5Add rice and mix, then add soy sauce, sugar and salt if needed.

6Stir until rice is hot.
