- 4 strips bacon
- 2 Tbsp. onion, chopped
- 1 Tbsp. green pepper
- 2 Tbsp. celery, chopped
- 2 c. cooked rice
- 2 eggs, beaten
Directions

1Cook bacon until crisp; drain.

2Saute onion, pepper and celery in bacon drippings.

3Remove vegetables with slotted spoon.

4Add rice to skillet.

5Cook until rice starts to brown.

6Add onion, pepper and celery to rice.

7Add bacon, crumbled; mix well.

8Make a hole in mixture.

9Put eggs in hole.

10Stir with fork until eggs are cooked, then shred egg through mixture.
