  • 6 c. cooked rice (cold)
  • 1/2 c. green onions, sliced
  • 1/2 c. green pepper, diced
  • 1/2 c. celery, sliced thin
  • 1 c. cooked meat, diced (chicken, pork or shrimp)
  • 2 Tbsp. oil
  • 2 eggs, beaten
  • soy sauce to taste

Directions

    In nonstick skillet or wok, saute onions, green pepper and celery until tender-crisp.

    Add rice and stir-fry until heated through.

    Add meat, eggs and soy sauce; stir-fry until egg sets. Serve hot.
