- 6 c. cooked rice (cold)
- 1/2 c. green onions, sliced
- 1/2 c. green pepper, diced
- 1/2 c. celery, sliced thin
- 1 c. cooked meat, diced (chicken, pork or shrimp)
- 2 Tbsp. oil
- 2 eggs, beaten
- soy sauce to taste
Directions

1In nonstick skillet or wok, saute onions, green pepper and celery until tender-crisp.

2Add rice and stir-fry until heated through.

3Add meat, eggs and soy sauce; stir-fry until egg sets. Serve hot.
