Fried Rice

  • 3 c. cooked, cool rice
  • 6 chopped green onions
  • 1 c. cooked chicken, beef, shrimp, etc.
  • 6 slices bacon
  • 3 or 4 eggs, beaten
  • soy sauce
  • peppers (if desired)
  • 1 c. chopped vegetable (broccoli, carrots, etc.)

Directions

    Fry bacon until crisp in large skillet; drain, reserving 2 tablespoons fat.

    Cool and crumble bacon.

    Get skillet hot; pour in beaten eggs and stir in rice, onions, meat and vegetables. Cook until eggs are cooked, then cover and steam until vegetables are tender.

    Stir in bacon; add soy sauce until dark.

    Cook 5 more minutes and serve.

    We like it served on a bed of fresh lettuce.
