Ingredients
- 1 c. uncooked rice
- 1 large onion, minced
- 1 medium carrot, sliced very thin
- 3/4 stick margarine
- 2 c. water (hot)
- 2 beef bouillon cubes
Directions

1Preheat oven to 400°.

2Dissolve bouillon cubes in 2 cups hot water (I do this in a microwave).

3Brown rice in 3/4 stick margarine in Dutch oven.

4When rice is brown add onion and carrot, stirring constantly.

5Add beef bouillon and stir.

6Immediately cover and place in oven.

7Bake at 400° for 20 minutes.

8Serves 4 to 6 people.

9I use a cast iron Dutch oven for this.

10The rice comes out really fluffy.
