- 2 c. uncooked rice
- 3 eggs
- 1 medium onion
- soy sauce
- choice of pork, chicken, ham or shrimp
- 2 tsp. salt
- 1 tsp. pepper
- 1 3/4 c. water
- 1 pkg. frozen peas and carrots
Directions

1Cook rice with water on medium heat until all water is gone. Turn to low.

2Stir the rice.

3Cover for 15 to 20 minutes; set aside.

4Beat eggs, one at a time; fry in large skillet with 1 tablespoon of butter.

5Cut into strips and set aside.

6Chop onion; fry in small amount of oil until it is clear.

7To this, add the chopped meat of choice and cook until the meat is done.

8Set aside.
