- 1 to 2 c. cooked, cubed ham
- 1 carrot, finely diced
- 1 Tbsp. soy sauce
- 1 Tbsp. instant minced onion
- 3 c. cooked rice (1 c. uncooked)
- 1 c. frozen peas
- 2 eggs
Directions

1Fry ham with soy sauce. Add carrots. Stir-fry to heat through. Add onions, rice and peas.

2Mix and heat over medium heat.

3Make a well in the center so bottom of pan is exposed. Add eggs and cook, stirring constantly, until soft scrambled, then mix into rice mixture.
