  • 2 c. rice
  • 6 pieces fried bacon, crumbled
  • 4 eggs, scrambled
  • 1 to 1 1/2 lb. shrimp, cooked
  • 1/2 c. green peppers, chopped
  • 1/4 c. green onions, chopped
  • 1 can water chestnuts or bamboo shoots
  • soy sauce to taste
  • 1/4 c. peanut oil

Directions

    Saute peppers and onions in peanut oil.

    Add shrimp and water chestnuts; cook 4 minutes.

    Combine remaining ingredients with rice and saute in peanut oil until well heated.
