- 1 1/2 Tbsp. oil
- 3 c. cooked rice
- 1/2 to 1 c. cooked chicken, pork or shrimp
- 6 green onions
- 1/4 tsp. ginger
- 1 red or green pepper, diced
- 2 eggs
- 2 Tbsp. soy sauce
- 1/2 tsp. sugar
Directions

1Heat oil in skillet over medium heat.

2Add rice and cook, stirring for 5 minutes.

3Add meat, green onions, ginger and pepper.

4Continue cooking for 3 minutes.

5Push rice mix to side; break eggs into the middle of skillet and scramble.

6Stir eggs into rice mixture.

7Add soy sauce and sugar; cook, stirring for 1 minute.
