- 3 Tbsp. vegetable oil
- 4 c. cold, cooked rice
- 1 clove garlic, minced
- 1 tsp. minced ginger root
- 5 scallions, diagonally sliced in 1-inch pieces
- 1 can small shrimp
- 1 Tbsp. soy sauce
- dash of pepper
- 2 eggs, beaten
Directions

1Preheat oil in wok at 375°.

2Stir-fry rice, garlic and ginger root until rice is slightly crisp, about 10 minutes.

3Add scallions and shrimp; stir-fry 1 minute.

4Add soy sauce and pepper; stir.

5Push rice mixture up the sides of the wok.

6Stir to break up eggs as they cook.

7When eggs have cooked, stir together with rice.

8Serve immediately.
