  • 2 Tbsp. oil
  • 2 eggs
  • 2 c. cooked rice
  • 1 green pepper
  • 2 medium carrots
  • 1 onion
  • 1/4 lb. baked ham or 10 large shrimp
  • salt and pepper
  • dash of Japanese seasonings
  • 1 tsp. Chinese seasonings
  • 1 Tbsp. soy sauce

Directions

    Chop green pepper, carrots and onion very fine.

    Cook in a skillet with oil.
  3. 3
    Add beaten eggs, vegetables and meat (chopped small).
  4. 4
    When cooked a little, mix in rice and seasonings.

    Just before serving, add soy sauce.
