- 2 Tbsp. oil
- 2 eggs
- 2 c. cooked rice
- 1 green pepper
- 2 medium carrots
- 1 onion
- 1/4 lb. baked ham or 10 large shrimp
- salt and pepper
- dash of Japanese seasonings
- 1 tsp. Chinese seasonings
- 1 Tbsp. soy sauce
Directions

1Chop green pepper, carrots and onion very fine.

2Cook in a skillet with oil.

3Add beaten eggs, vegetables and meat (chopped small).

4When cooked a little, mix in rice and seasonings.

5Just before serving, add soy sauce.
