Fried Rice

  • 1/4 c. vegetable oil
  • 3 c. cold cooked rice, cooked and refrigerated at least a day ahead
  • 4 chopped green onions
  • 3/4 tsp. salt
  • 1/2 c. chopped, cooked roast pork or ham or 1 c. diced shrimp or chicken
  • 3 eggs
  • 1 1/2 Tbsp. soy sauce
  • 1/4 c. minced coriander leaves

    Heat oil in skillet.

    Add rice; cook until hot and golden. Add onions, salt and meat.

    When these ingredients are well mixed, hollow a center in the rice.

    Break eggs into hollow well and scramble until semi-cooked, then stir into rice mixture.

    Sprinkle with soy sauce and coriander.
