- 1/4 c. vegetable oil
- 3 c. cold cooked rice, cooked and refrigerated at least a day ahead
- 4 chopped green onions
- 3/4 tsp. salt
- 1/2 c. chopped, cooked roast pork or ham or 1 c. diced shrimp or chicken
- 3 eggs
- 1 1/2 Tbsp. soy sauce
- 1/4 c. minced coriander leaves
Directions

1Heat oil in skillet.

2Add rice; cook until hot and golden. Add onions, salt and meat.

3When these ingredients are well mixed, hollow a center in the rice.

4Break eggs into hollow well and scramble until semi-cooked, then stir into rice mixture.

5Sprinkle with soy sauce and coriander.
