Ingredients
- 8 c. cooked rice (cold)
- 1 lb. lean pork, cut into very thin strips (2 to 3-inches long)
- 4 young spring onions, chopped
- 1 or 2 fresh chilies (if available)
- 1/2 lb. shrimp (small)
- 1/4 to 1/2 c. celery, cut diagonally
- 4 Tbsp. vegetable oil
- 1 c. peanuts or cashews
- 1 c. raisins
- 1 or 2 eggs
- 2 lettuce leaves
- salt and pepper
- lite soy sauce
Directions

1In a large pan or wok; fry onions and celery in oil until soft.

2Fry pork strips.

3Add cold rice and shrimp.

4Stir until hot.

5Season with salt, pepper and soy sauce.

6Make a light omelet with the eggs (I use Egg Beaters); roll and slice in thin strips. Place rice mixture on a platter or in a large bowl.

7Garnish with omelet strips, green onions, raisins, nuts and strips of lettuce. Serve hot, using more soy sauce if desired.
